Sweet Red Pepper Turkey Lo Mein

 

8 oz. uncooked lo mein noodles

1/2 cup chicken broth

1/2 cup spicy stir fry sauce

1 Tbs. cornstarch

1 Tbs. oil

3/4 lb. turkey tenderloin, thinly sliced into 2" wide strips

1/8 tsp. salt or Mrs. Dash

2 cups frozen broccoli cuts

1 medium red bell pepper, cut in 1" pieces

2 medium onions, sliced

 

Cook noodles to desired doneness as directed on package.  Drain and keep warm.

 

Meanwhile, in a small bowl, combine broth, stir fry sauce, and cornstarch; blend well.  Set aside.

 

Heat oil in large skillet or wok over medium-high heat until hot.  Add turkey strips;  sprinkle with salt or Mrs. Dash.  Cook and stir 3 - 5 minutes, or until turkey is no longer pink.  Remove turkey from skillet;  cover to keep warm.

 

Add broccoli, bell pepper, and onions to same skillet;  cook and stir 4 - 5 minutes or until vegetables are tender-crisp.  Return turkey to skillet.

 

Stir cornstarch mixture until smooth.  Add to skillet;  cook and stir until sauce is bubbly and thickened.  Serve over noodles.

 

Serves 4.  A single serving equals 400 calories with 5 grams of fat.
